French Coconut Pie ✨🍰
Ingredients:
1 unbaked 9-inch pie crust (store-bought or homemade)
1 cup granulated sugar
1/2 cup unsalted butter, melted
2 large eggs
1 tablespoon all-purpose flour
1 teaspoon vanilla extract
1 cup sweetened shredded coconut
3/4 cup evaporated milk (or heavy cream for extra richness)
1/4 teaspoon salt
Directions:
Preheat oven to 350°F (175°C). Place your unbaked pie crust into a 9-inch pie dish and crimp the edges.
In a large mixing bowl, whisk together the melted butter and sugar until well blended.
Add in the eggs, flour, vanilla extract, evaporated milk, and salt. Whisk until smooth and fully incorporated.
Stir in the shredded coconut.
Pour the mixture into the prepared pie crust and smooth the top.
Bake for 45–50 minutes or until the top is golden and the center is set (a slight jiggle in the middle is okay).
Cool to room temperature, then chill before slicing for the cleanest cut.
