Grilled Steak with Marinated Cucumber, Tomato, and Onion Salad
Ingredients:
1 lb flank steak
2 medium cucumbers, sliced
2 cups cherry tomatoes, halved
1 red onion, thinly sliced
1/4 cup olive oil
2 tablespoons red wine vinegar
2 cloves garlic, chopped
1 teaspoon dried oregano
Salt and pepper to taste
Directions:
Begin by preparing the steak marinade. In a bowl, mix the olive oil, red wine vinegar, garlic, oregano, salt, and pepper. Place the flank steak in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 1 hour to let the flavors infuse.
Preheat your grill to medium-high heat. Grill the steak for 5-7 minutes on each side, or until it reaches your desired level of doneness. Once cooked, let the steak rest for a few minutes before slicing it thinly.
For the salad, combine the sliced cucumbers, halved cherry tomatoes, and thinly sliced red onion in a large bowl. Toss the ingredients together to mix well.
To assemble, arrange the sliced grilled steak over the prepared cucumber, tomato, and onion salad.
Serve the salad immediately, topped with the grilled steak. Enjoy!
