250g Butter
1c Sugar
2 Eggs
2 Tsp Vanilla Essence
1 Tbsp Oil
3c Cake Flour
3 Tsp Baking Powder
1/4 Tsp Salt
125ml Toasted med Coconut
Jam of choice
METHOD
Whisk Butter for 2min, add Sugar, whisk well, add Eggs, Essence and Oil, whisk well, add sifted Flour, Baking powder and Salt...Oil hands and mix to a soft Dough...divide Dough into 2 parts, freeze the one half for 20 min, roll out the other half on Parchment paper and place in a baking tray or Pan, prick dough with a fork, Spoon enough Jam on base and spread evenly, then remove the dough from freezer and Grate over the top, Toast Coconut in a pan till golden brown and sprinkle Coconut on top, bake at 180deg, 25 min or till golden brown..dust with Icing Sugar..slice while still warm..
