Pineapple Casserole
Ingredients:
1 (20 oz) can pineapple chunks, drained (reserve 1/4 cup juice)
1 cup granulated sugar
1 cup sharp cheddar cheese, shredded
6 tablespoons all-purpose flour
1 sleeve buttery round crackers (like Ritz), crushed
1/2 cup unsalted butter, melted
1/4 cup reserved pineapple juice
Directions:
Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
In a mixing bowl, combine the drained pineapple chunks, sugar, flour, and shredded cheddar cheese. Stir until evenly coated.
Pour the mixture into the prepared baking dish.
In a separate bowl, mix the crushed crackers with melted butter and pineapple juice.
Sprinkle the buttery cracker topping evenly over the pineapple mixture.
Bake for 30–35 minutes, or until golden brown and bubbly.
Let it rest for 5–10 minutes before serving warm.
