Ingredients:

2 tablespoons olive oil

1 large onion, diced

2 cloves garlic, minced

1 lb ground beef

2 large carrots, diced

1 cup frozen peas

1 tablespoon tomato paste

1 cup beef broth

2 tablespoons Worcestershire sauce

4 cups mashed potatoes (prepared in advance)

Salt and pepper to taste
Directions:

Preheat your oven to 400°F (200°C).

Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing for about 2 minutes, until softened.

Add the ground beef to the skillet, breaking it up with a spatula as it cooks. Cook for 5-7 minutes until browned.

Stir in the diced carrots and cook for another 3-4 minutes.

Add the tomato paste, beef broth, and Worcestershire sauce to the skillet. Stir well and let simmer for about 10 minutes, until the mixture thickens. Season with salt and pepper to taste.

Add the frozen peas to the skillet and stir to combine. Remove from heat.

Transfer the beef and vegetable mixture to a baking dish and spread evenly.

Spoon the mashed potatoes over the beef mixture, spreading it out with a spatula to cover completely.

Bake the shepherd’s pie for 20-25 minutes, until the top is golden and the filling is bubbling.

Remove from the oven and let cool for a few minutes before serving.
