Creamy Garlic Parmesan Chicken with Tender Broccoli Penne
Ingredients:
2 medium chicken breasts, diced
3 cups penne pasta
2 cups broccoli florets
3 tablespoons olive oil
4 garlic cloves, minced
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste
Fresh parsley for garnish (optional)
Directions:
Cook the pasta and broccoli:
Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions. Add the broccoli florets to the pot during the last 3 minutes of cooking. Drain and set aside.
Prepare the chicken:
Season the diced chicken breasts with garlic powder, onion powder, salt, and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken and cook until golden and fully cooked, about 5-7 minutes. Remove the chicken and set aside.
Make the sauce:
In the same skillet, add the remaining olive oil and minced garlic. Sauté for 1-2 minutes until fragrant. Stir in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese and stir until the sauce is smooth and creamy.
Combine and finish:
Return the cooked chicken, pasta, and broccoli to the skillet. Toss everything together to coat evenly in the garlic Parmesan sauce. Adjust seasoning with salt, pepper, and red pepper flakes if desired.
Serve:
Garnish with fresh parsley, if using. Serve immediately and enjoy the creamy, flavorful dish!
