RECIPE - Serves 2
Ingredients πŸ›’
300g/10.5oz Farfalle Bow-Tie Pasta
250g/8.8oz Cherry Tomatoes, halved (red and yellow)
5 Cloves Garlic, minced
2 Tsp Italian Mixed Herbs
1/2 Tsp Paprika
150g/5.3oz Baby Spinach
2 (160g/5.6oz) Cans Tuna, crumbled
2 Tbsp Chopped Anchovy Fillets
175g/6oz Crumbled Feta Cheese
A Handful of Kalamata Olives
1/2 Cup Chopped Fresh Basil
Juice of 1/2 a Lemon
Salt & Pepper

Method:
Cook pasta in salted boiling water until al dente. Drain.
In the meantime, make the filling. In a large deep skillet, heat about 4 tablespoons olive oil and saute the onion until tender. Add the minced garlic, cherry tomatoes, anchovy, olives, paprika and Italian herbs. Stir through for another minute, then add the spinach and cook just until the spinach wilts.
Add in the crumbled tuna and basil. Stir through, then add the cooked pasta, feta cheese and freshly squeezed lemon juice.
Season with salt and pepper and serve.
Garnish with extra crumbled feta cheese and chopped fresh basil.
