Honey Garlic Pork Chops with Mashed Potatoes
Ingredients:
For the Pork Chops:
4 bone-in pork chops (about 1 inch thick)
Salt and black pepper, to taste
1 tablespoon olive oil
3 tablespoons butter
4 garlic cloves, minced
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
1 teaspoon fresh thyme leaves (optional)
For the Mashed Potatoes:
2 pounds Yukon Gold potatoes, peeled and quartered
4 tablespoons butter
1/2 cup milk (or heavy cream for richer mash)
Salt and pepper, to taste
Chopped parsley for garnish
Directions:
Bring a large pot of salted water to a boil. Add potatoes and cook for 15–20 minutes, or until fork-tender.
Drain the potatoes, then mash with butter and milk until creamy. Season with salt and pepper. Set aside and keep warm.
While potatoes cook, season pork chops with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 4–5 minutes per side, or until golden and cooked through. Remove and set aside.
In the same skillet, reduce heat to medium. Add butter and garlic, cooking until fragrant (about 30 seconds).
Stir in honey, soy sauce, and apple cider vinegar. Let it simmer for 2–3 minutes until slightly thickened.
Return pork chops to the skillet and spoon sauce over them. Simmer for another 1–2 minutes.
Plate pork chops over a bed of creamy mashed potatoes. Drizzle extra sauce over the top. Garnish with thyme and parsley if desired.
