Golden-Fried Bologna Sandwiches with Melted Cheese
Ingredients:
8 slices thick-cut bologna
4 slices American or cheddar cheese
4 sandwich rolls or hamburger buns
2 tablespoons mayonnaise
1 tablespoon yellow mustard
2 tablespoons butter
1 tablespoon oil (for frying)
Optional toppings: pickles, shredded lettuce, sliced tomato
Directions:
Heat a large skillet over medium-high heat. Add the oil and allow it to shimmer.
Slice small slits around the edges of each bologna slice (to prevent curling) and add to the skillet. Fry until golden and crispy on the edges, about 2–3 minutes per side. Remove and set aside.
Butter the inside of each sandwich bun and toast them, cut side down, in the same skillet until golden brown.
On the bottom half of each bun, layer 2 slices of fried bologna, followed by a slice of cheese.
Return the stacked sandwiches (open-faced) to the skillet or under a broiler for 1–2 minutes, just until the cheese melts.
Spread mayo and mustard on the top bun halves.
Add pickles, lettuce, or tomato if desired, close the sandwich, and serve hot!
