🛒 Ingredients:
2 chicken breasts, cut into bite-sized pieces 🍗
1 tablespoon olive oil 🫒
1 red bell pepper, sliced 🌶️
2 cups broccoli florets 🥦
1/2 onion, diced 🧅
2 cloves garlic, minced 🧄
1 tablespoon curry powder
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1 cup coconut milk 🥥
Salt & pepper to taste 🧂
Fresh cilantro for garnish 🌿

Heat olive oil in a large skillet over medium heat. Add chicken and cook until lightly browned. Stir in garlic and onion and cook for another 2 minutes. Add red pepper and broccoli, cooking until slightly tender. Sprinkle in curry powder, cumin, paprika, salt, and pepper. Pour in coconut milk, stir well, and let it simmer for about 10 minutes until the sauce thickens and chicken is cooked through. Garnish with fresh cilantro and serve with rice or naan!
💡 Tip: Add a dash of chili flakes if you like it spicy!
