Crispy Potato and Onion Fritters
Ingredients:
3 medium potatoes, grated
1 small onion, finely chopped
1 egg
1/2 cup flour
1/4 teaspoon baking powder
Salt and pepper to taste
1/2 teaspoon paprika (optional)
2 tablespoons olive oil for frying
Directions:
Grate the potatoes and place them in a clean towel to squeeze out excess moisture.
In a large bowl, combine the grated potatoes, chopped onion, egg, flour, baking powder, salt, pepper, and paprika. Stir until well mixed.
Heat the olive oil in a skillet over medium heat.
Drop spoonfuls of the potato mixture into the hot skillet, pressing them down slightly to form fritters. Cook for 3-4 minutes on each side until golden and crispy.
Drain on paper towels and serve warm with your favorite dipping sauce!
