🍗🥔 Creamy Garlic Chicken with Roasted Baby Potatoes – One-Pan Comfort Dinner

Ingredients:
600g chicken breast, cut into chunks 🍗
500g baby potatoes, halved 🥔
2 tbsp olive oil
2 garlic cloves, minced 🧄
200ml heavy cream 🥛
50ml chicken broth
1 tsp Dijon mustard
1 tsp dried thyme
Salt & pepper to taste
Fresh parsley, chopped 🌿
Instructions:
Preheat oven to 200°C. Toss baby potatoes with 1 tbsp oil, salt, pepper, and roast cut-side down for 25 minutes until golden. Meanwhile, season chicken pieces with salt and pepper and sear in 1 tbsp oil in a large skillet until browned. Remove and set aside. In the same pan, sauté garlic for a minute, then pour in cream, chicken broth, mustard, and thyme. Let it simmer for 2-3 minutes. Return chicken to the skillet and simmer in the sauce for 7-8 minutes until cooked through. Serve hot with roasted potatoes and a sprinkle of parsley.
