Ingredients (For 2-3 Servings):
For the Blackened Salmon:
2 salmon fillets (6 oz each)
1 tbsp olive oil
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
½ tsp cayenne pepper
½ tsp smoked paprika (optional, for extra smoky flavor)
½ tsp salt
¼ tsp black pepper
For the Cajun Shrimp:
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper (adjust based on spice tolerance)
1 tsp dried oregano
½ tsp salt
¼ tsp black pepper
For the Creamy Garlic Parmesan Pasta:
8 oz fettuccine pasta (or pasta of choice)
2 tbsp unsalted butter
3 cloves garlic, minced
1 cup heavy cream
1 cup freshly grated parmesan cheese
1 tbsp chopped fresh parsley
Salt & pepper, to taste
Instructions:
Step 1: Prepare the Seasonings
In a small bowl, combine the paprika, garlic powder, onion powder, thyme, cayenne pepper, smoked paprika, salt, and pepper for the blackened salmon.
In another small bowl, combine the paprika, garlic powder, onion powder, cayenne pepper, oregano, salt, and pepper for the cajun shrimp.
Step 2: Cook the Pasta
Bring a large pot of salted water to a boil.
Cook the fettuccine pasta according to package directions, about 8-10 minutes, until al dente.
Drain the pasta, reserving ½ cup of pasta water, and set aside.
Step 3: Cook the Blackened Salmon
Rub the salmon fillets with olive oil and coat with the blackened seasoning mix.
Heat a large skillet over medium-high heat and add a little olive oil.
Place the salmon in the skillet, skin-side down (if the skin is on) and cook for 4-5 minutes per side, until the salmon is cooked through and has a crispy blackened crust.
Remove the salmon from the skillet and set aside.
Step 4: Cook the Cajun Shrimp
Toss the shrimp with olive oil and the cajun seasoning.
