Baked Spinach and Mushroom QuesadillasIngredients:
4 flour tortillas
2 cups fresh spinach, roughly chopped
1 cup mushrooms, sliced (button, cremini, or portobello)
1 cup shredded mozzarella cheese (or a blend of Mexican cheese)
1/2 cup shredded cheddar cheese (optional)
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
Salt and pepper, to taste
1 tablespoon butter, melted (for brushing)
Sour cream or salsa, for serving (optional)
Instructions:
Prepare the Filling:
Heat the olive oil in a large skillet over medium heat. Add the onion and cook for 3-4 minutes, until softened.
Add the garlic and mushrooms to the skillet and cook for another 5-7 minutes until the mushrooms release their moisture and become tender.
Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted. Season with oregano, cumin, salt, and pepper. Stir to combine and remove from heat. Set aside to cool for a few minutes.
Assemble the Quesadillas:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Lay out 2 flour tortillas on the prepared baking sheet.
Evenly distribute the spinach and mushroom mixture over each tortilla, then sprinkle with mozzarella and cheddar cheese.
Top with the second tortilla to form the quesadilla.
Bake the Quesadillas:
Brush the top of the quesadillas with the melted butter for a golden, crispy texture.
Bake in the preheated oven for 10-12 minutes, flipping halfway through, until both sides are golden brown and the cheese is melted inside.
Serve:
Remove from the oven and let them cool for a minute before slicing into wedges.
Serve with sour cream, salsa, or your favorite dipping sauce.
Tips:
Extra Veggies: You can add extra vegetables like bell peppers, zucchini, or even corn for added flavor and texture.
Cheese Options: Feel free to use any cheese you prefer, such as Monterey Jack, Colby, or Pepper Jack for a spicy kick.
Healthier Version: To make this a bit lighter, use whole wheat tortillas and reduce the amount of cheese.
