π§ Mature Cheddar Cheese β 200g, grated
π₯ Plain Flour β 1 tbsp
π§ Butter β 25g
π₯ Milk β 100ml
πΏ Dijon Mustard β 1 tsp
πΆ Worcestershire Sauce β 1 tsp
π§ Salt & Black Pepper β To taste
π Thick-Cut Bread (Sourdough or Bloomer) β 4 slices
π₯ Egg Yolk β 1 (optional, for extra richness)

1οΈβ£ Melt the Cheese Sauce:
In a saucepan over low heat, melt the butter and stir in the flour to form a paste.
Slowly add the milk, whisking to make a smooth sauce.
Stir in the cheddar cheese, mustard, Worcestershire sauce, salt, and pepper.
Continue stirring until the cheese is melted and the sauce is thick.
For extra richness, stir in the egg yolk and mix well.

Lightly toast the bread slices under the grill or in a toaster until just golden.

Spread a generous layer of the cheese sauce over each slice of toast.
