For the Chicken:
2 chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
Salt & black pepper to taste
For the Sweet Potato Fries:
2 medium sweet potatoes (cut into fries)
1 tbsp olive oil
Β½ tsp paprika
Salt to taste
For the Guacamole:
1 ripe avocado
Juice of Β½ lime
1 tbsp chopped cilantro
Salt & pepper to taste
For the Tomato Salad:
1 cup cherry tomatoes (halved)
ΒΌ red onion (diced)
Fresh parsley (chopped)
Splash of olive oil & vinegar

Preheat oven to 200Β°C (390Β°F). Toss sweet potato fries with oil, paprika, and salt, then bake for 20β25 minutes until crispy. Meanwhile, season the chicken with olive oil, garlic powder, oregano, salt, and pepper. Grill or pan-fry for 6β7 minutes per side until golden and cooked through. For the guacamole, mash avocado with lime juice, cilantro, salt, and pepper. Mix the tomato salad ingredients in a bowl and season lightly. Plate everything together and enjoy warm!
