Ingredients:
For the Chocolate Cake:
1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 cups sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
2 large eggs
1 cup milk
1/2 cup vegetable oil
2 tsp vanilla extract
1 cup hot water
For the Cherry Filling:
2 cups cherries (fresh or canned, drained)
1/2 cup cherry juice or syrup
1/4 cup sugar
1 tbsp cornstarch
For the Whipped Cream Frosting:
2 cups heavy whipping cream
1/2 cup powdered sugar
1 tsp vanilla extract
For Garnishing:
Chocolate shavings
Whole cherries
Instructions:
Make the Cake Batter:
Preheat oven to 350Β°F (175Β°C). Grease and flour two 9-inch cake pans.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
Add eggs, milk, oil, and vanilla. Mix well.
Stir in hot water (batter will be thin). Pour evenly into cake pans.
Bake the Cakes:
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Let cakes cool completely before assembling.
Prepare the Cherry Filling:
In a saucepan, combine cherries, cherry juice, sugar, and cornstarch.
Cook over medium heat until thickened (about 5 minutes). Let cool.
Whip the Cream:
Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
Assemble the Cake:
Place one cake layer on a serving plate. Spread a layer of whipped cream, then add cherry filling.
Place the second cake layer on top and cover with more whipped cream.
Decorate with chocolate shavings and whole cherries.
Chill & Serve:
Refrigerate for at least 1 hour before serving.
