π INGREDIENTS:
4 boneless, skinless chicken breasts
1/2 cup unsalted butter, softened
4 cloves garlic, minced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh dill, chopped
1 tablespoon lemon juice
Salt and pepper to taste
1 cup all-purpose flour
2 large eggs, beaten
2 cups breadcrumbs
Vegetable oil, for frying
π INSTRUCTIONS:
STEP 1: PREPARE THE GARLIC BUTTER
- In a bowl, combine the softened butter, minced garlic, chopped parsley, chopped dill, lemon juice, salt, and pepper. Mix well until all ingredients are fully incorporated.
- Shape the garlic butter into a log using plastic wrap and refrigerate until firm, about 30 minutes.
STEP 2: PREPARE THE CHICKEN
- Preheat your oven to 350Β°F (175Β°C).
- Place each chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to an even thickness, about 1/2 inch.
- Take the chilled garlic butter from the refrigerator and cut it into 4 equal pieces. Place one piece of garlic butter in the center of each chicken breast.
STEP 3: ROLL AND SEAL
- Fold the sides of the chicken over the butter, then roll it up tightly from the bottom to the top, securing the butter inside. Use toothpicks to secure the ends if necessary. Repeat for all chicken breasts.
STEP 4: BREAD THE CHICKEN
- Set up a breading station: Place flour in one shallow dish, beaten eggs in another, and breadcrumbs in a third.
- Dredge each chicken roll in flour, shaking off the excess. Dip it into the beaten eggs, then coat it thoroughly with breadcrumbs, pressing gently to adhere.
STEP 5: COOK THE CHICKEN
- In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully place the chicken rolls in the skillet, cooking for about 4-5 minutes on each side until golden brown.
- Transfer the cooked chicken to a baking dish and bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165Β°F (75Β°C).
STEP 6: SERVE
- Remove the chicken from the oven and let it rest for a few minutes before slicing. Serve hot, allowing the garlic butter to ooze out when cut.
