Crispy Fish Batter
Ingredients:
1 cup all-purpose flour
½ cup cornstarch
1 tsp baking powder
1 tsp garlic powder
1 tsp paprika
1 tsp salt
½ tsp black pepper
1¼ cups ice-cold club soda or sparkling water
1½ lbs white fish fillets (cod or haddock)
Oil for frying
Directions:
Whisk dry ingredients in a bowl. Slowly add club soda, stirring gently until batter is just smooth.
Pat fish dry and lightly dust with flour.
Heat oil to 350°F. Dip fish into batter, letting excess drip off.
Fry 3–4 minutes per side until golden and crisp. Drain on paper towels.
