300g raw shrimp, peeled and deveined
1 tbsp olive oil π«
1 tsp smoked paprika
Β½ tsp chili powder
Β½ tsp garlic powder π§
Salt & pepper to taste π§
Juice of Β½ lime π
π₯ For the Mango Salsa:
1 ripe mango, diced π₯
ΒΌ red onion, finely chopped π§
Fresh cilantro, chopped πΏ
Juice of Β½ lime π
Pinch of salt π§
π For the Bowl:
1 cup jasmine or basmati rice
2 cups water π§
1 ripe avocado, sliced or cubed π₯
Extra fresh cilantro for garnish πΏ

Cook the rice in salted water until fluffy. Meanwhile, toss the shrimp in olive oil, spices, salt, and lime juice. SautΓ© in a hot skillet for 2β3 minutes per side until golden and fully cooked. Mix mango salsa ingredients in a bowl. Assemble your bowl: start with rice, top with spicy shrimp, mango salsa, avocado, and sprinkle with extra cilantro. Serve immediately and enjoy fresh!
