- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup chopped pecans
- 4 cups mini marshmallows
- 16 ounces confectioners' sugar
- 1/2 cup whole milk
- 1/2 cup cocoa powder
- 1/4 cup unsalted butter, softened
📝 Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
2. In a large mixing bowl, beat together the butter and granulated sugar until creamy.
3. Add the eggs one at a time, mixing well after each addition.
4. Gradually add flour and cocoa powder, mixing until well combined.
5. Stir in vanilla extract and fold in chopped pecans.
6. Pour the batter into the prepared baking dish and bake for 25 minutes or until a toothpick comes out clean.
7. Immediately after removing from the oven, sprinkle mini marshmallows over the top and let sit for a few minutes before spreading.
8. For the icing, mix confectioners' sugar, cocoa powder, and softened butter in a bowl, gradually adding milk until smooth.
9. Once the cake has cooled slightly, pour the icing over the marshmallow layer and let set before serving.
