INGREDIENTS
FOR THE FLOOR
200 g Kadayif (angel hair)
20g butter
180 g pistachio cream
1 tsp sesame paste (tahini)
FOR THE FILLING
100g powdered sugar
600 g double cream cheese (natural)
200 g cream
3 packs of cream stiffener
100 g pistachio cream
FOR THE TOPPING
75g cream
150 g whole milk couverture
2 tbsp chopped pistachios
ASIDE FROM THAT
Some melted butter for the mold
Some powdered sugar for the shape
PREPARATION
1st step
Set the cake ring to a diameter of 26 cm and place it on a cake plate. Brush the inside of the ring with melted butter and dust with powdered sugar. This will make it easier for the cake to come off the cake ring later. For the base, place the kadayif on a large board and chop into pieces approx. 1.5 cm wide. Heat the butter in a pan over a medium heat and fry the angel hair until golden brown, about 8 minutes, stirring constantly.
2nd step
Heat the pistachio puree in a water bath so that it becomes more liquid, then add it to the angel hair. Add the sesame paste and mix everything well. Pour the mixture into the cake ring and press it down well with a spoon. Refrigerate the cake base for about 1 hour.
3rd step
For the filling, sift the powdered sugar and mix it with the cream cheese, cream and cream stiffener in a bowl until smooth. Add the pistachio cream and beat everything until creamy on the highest level for 5 minutes. Spread the cream cheese cream on the cake base and smooth it out with a palette
