Savory Spicy Jalapeño Popper Bisque
Ingredients:
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
4 cups vegetable broth
2 cups diced potatoes
1 cup diced jalapeños, seeds removed for less heat
1 cup cream cheese, softened
1 cup shredded cheddar cheese
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh cilantro, for garnish

Directions:
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Pour in the vegetable broth and add the diced potatoes and jalapeños. Bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender, approximately 15-20 minutes.

Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

Stir in the softened cream cheese and shredded cheddar cheese until melted and well combined. Add the smoked paprika, and season with salt and pepper to taste.

Serve the bisque hot, garnished with fresh cilantro for a burst of flavor.
