Ingredients:

For the Lamb Chops:

8 lamb chops (about 1-inch thick)
2 tbsp olive oil
Salt and black pepper to taste
1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
For the Mustard Thyme Sauce:

2 tbsp Dijon mustard
2 tbsp whole grain mustard
1/2 cup heavy cream
1/4 cup chicken broth
1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
1 tbsp butter
Salt and black pepper to taste
Instructions:

Prepare the Lamb Chops:

Season the lamb chops with salt, black pepper, and fresh thyme leaves.
Heat olive oil in a large skillet over medium-high heat. Sear the lamb chops for about 3-4 minutes per side, or until they reach your desired level of doneness (medium-rare is typically 145°F or 63°C). Remove the lamb chops from the skillet and let them rest while you make the sauce.
Make the Mustard Thyme Sauce:

In the same skillet, reduce the heat to medium. Add Dijon mustard, whole grain mustard, heavy cream, chicken broth, and fresh thyme leaves. Stir to combine and bring to a simmer.
Cook the sauce for 3-4 minutes, or until it thickens slightly. Stir in the butter until melted and smooth. Season with salt and black pepper to taste.
Serve:

Return the lamb chops to the skillet, spooning some of the sauce over them. Cook for an additional minute to warm the chops through.
