Beef Barley Soup (Slow Cooker)
Ingredients:
1 pound beef stew meat, cut into small pieces
1 cup pearl barley
1 onion, chopped
2 carrots, peeled and diced
2 stalks celery, diced
3 cloves garlic, minced
6 cups beef broth
1 can (14.5 oz) diced tomatoes
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
Salt and black pepper to taste
Fresh parsley, chopped for garnish
Directions:
Place beef stew meat, pearl barley, onion, carrots, celery, and garlic in a slow cooker.
Add beef broth, diced tomatoes, thyme, and rosemary.
Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the meat is tender and the barley is cooked through.
Season with salt and black pepper to taste.
Serve hot, garnished with chopped fresh parsley.
