📋 Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup whipped topping (such as Cool Whip)
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup fresh lemon juice
- Zest of 1 lemon
- 4 large egg yolks
- 1 cup heavy whipping cream (optional)
- 2 tablespoons powdered sugar (optional)
- 1 teaspoon vanilla extract (optional)
📝 Instructions
1. Preheat your oven to 350°F (175°C).
2. In a medium bowl, combine graham cracker crumbs and granulated sugar. Stir in melted butter until the mixture resembles wet sand.
3. Press the mixture firmly into the bottom of an 8×8-inch baking pan lined with parchment paper.
4. Bake for 8–10 minutes, then remove from the oven and let it cool completely.
5. In a separate bowl, beat the softened cream cheese until smooth.
6. Add powdered sugar and mix until well combined.
7. Gently fold in the whipped topping until the mixture is smooth and fluffy.
8. Spread the cream cheese mixture evenly over the cooled crust.
9. Place the pan in the refrigerator to chill while preparing the lemon layer.
10. In a medium bowl, whisk together sweetened condensed milk, fresh lemon juice, lemon zest, and egg yolks until fully combined.
11. Pour the lemon mixture over the chilled cream cheese layer, spreading it evenly.
12. Return the pan to the oven and bake at 350°F (175°C) for 15–20 minutes, or until the lemon layer is set.
13. Remove from the oven and allow it to cool to room temperature, then refrigerate for at least 2 hours to set completely.
14. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
15. Spread the whipped cream over the chilled lemon layer.
