Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted

16 oz (450g) cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 1/4 cups heavy whipping cream, cold
For the topping:
1 cup fresh strawberries, sliced
1 cup fresh blueberries
Optional: extra whipped cream for garnish
Instructions:
1. In a medium bowl, mix together graham cracker crumbs and sugar, then stir in melted butter until the mixture resembles wet sand.
2. Firmly press this mixture into the bottom of an 8- or 9-inch springform pan or pie dish, then chill in the refrigerator while you prepare the filling.
3. In a large bowl, beat the softened cream cheese until smooth. Add in the powdered sugar and vanilla, beating until fluffy and well-combined.
4. In another bowl, whip the cold heavy cream until it forms stiff peaks.
5. Gently fold the whipped cream into the cream cheese mixture until smooth and evenly blended.
6. Pour the filling onto the chilled crust, smoothing the top with a spatula.
7. Decorate with strawberries and blueberries in a flag-inspired arrangement or any festive design you prefer.
8. Refrigerate for at least 4 hours, or until the cheesecake is fully set.
