Mango Coconut Cheesecake with Passion Fruit Glaze
Ingredients:
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsweetened shredded coconut
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup canned coconut milk
- 1 cup ripe mango puree (about 2 ripe mangoes)
- 3 large eggs
- 1 tablespoon cornstarch
For the Passion Fruit Glaze:
- 1/2 cup passion fruit pulp (fresh or canned)
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions:Preheat the Oven:
- Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
Make the Crust:
1. In a medium bowl, combine the graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Mix until well combined.
2. Press the mixture firmly into the bottom of the prepared springform pan to form an even layer.
3. Bake in the preheated oven for 10 minutes. Remove and let cool.

1. In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.

Make the Passion Fruit Glaze:
1. In a small saucepan, combine the passion fruit pulp, granulated sugar, cornstarch, and water.
2. Cook over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil. Remove from heat and let cool.
Assemble the Cheesecake:
1. Once the cheesecake is fully chilled, remove it from the springform pan.
2. Pour the passion fruit glaze over the top of the cheesecake, spreading it evenly.
