ingredients:
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 can (15 oz or 425g) brown or green lentils, rinsed and drained
1/2 cup (120ml) vegetable broth
2 tablespoons tomato paste
1 tablespoon soy sauce or tamari
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon dried oregano
Salt and black pepper to taste
directions:
Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the minced garlic and cook for another minute until fragrant.
Stir in the rinsed and drained lentils, vegetable broth, tomato paste, soy sauce/tamari, chili powder, cumin, smoked paprika, and oregano.
Bring the mixture to a simmer, then reduce heat to low and let it cook for 10-15 minutes, stirring occasionally, until most of the liquid has been absorbed and the mixture is thick.
Use the back of a spoon or a potato masher to slightly mash some of the lentils against the side of the pan. This helps create a texture similar to ground meat.
Season with salt and pepper to taste.
Serve hot as a filling for tacos, burritos, nachos, or bowls.
