Homemade Vanilla two-layer Cake with sprinkles:
Ingredients:
For the cake:
2 ½ cups all-purpose flour
2 ½ tsp baking powder
½ tsp salt
1 cup unsalted butter (room temperature)
2 cups granulated sugar
4 large eggs
2 tsp vanilla extract
1 cup whole milk
Sprinkles (for decoration and inside the batter)
For the frosting:
1 cup unsalted butter (room temperature)
4 cups powdered sugar
2 tsp vanilla extract
2-3 tbsp heavy cream or milk
Pinch of salt
Directions:
For the cake:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
3. In a large bowl, cream together the butter and sugar until light and fluffy, about 3-4 minutes.
4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
5. Gradually add the dry ingredients to the butter mixture, alternating with milk, beginning and ending with the flour mixture. Mix until smooth.
6. Gently fold in a handful of sprinkles (optional: you can also add some to the batter if you want sprinkles inside the cake).
7. Divide the batter evenly between the prepared cake pans and smooth the tops.
8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
9. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
For the frosting:
1. In a large bowl, beat the butter until smooth and creamy, about 2 minutes.
2. Gradually add powdered sugar, 1 cup at a time, mixing until smooth.
3. Add vanilla extract and 2 tbsp of heavy cream. Beat until fluffy. If the frosting is too thick, add more cream, 1 tbsp at a time, until desired consistency is reached.
4. Add a pinch of salt to balance the sweetness.
Assembling the cake:
1. Once the cakes are fully cooled, place one layer on a cake plate or stand.
2. Spread a layer of frosting on top of the first cake layer.
3. Place the second cake layer on top, pressing gently to secure.
4. Frost the top and sides of the entire cake with the vanilla frosting.
5. Decorate with sprinkles on top and around the sides as desired.
