Ingredients:
- 4 large potatoes, peeled and cut into thick fries
- 4 white fish fillets (cod or haddock)
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup cold sparkling water
- Vegetable oil for frying
- Malt vinegar, for serving

Instructions:
1. Preheat oil in a deep fryer or large pot to 350°F (175°C).

2. Rinse and pat dry the potato fries. Fry in batches until golden and crispy, then drain on paper towels.

3. In a bowl, whisk flour, baking powder, and salt. Gradually add sparkling water to form a smooth batter.

4. Coat fish fillets in the batter and fry until golden brown and crispy, about 4-5 minutes per side.

5. Serve the fish with fries, and drizzle with malt vinegar if desired.

Enjoy!
