Pumpkin Cake Mix Cookies
Ingredients:
- 1 box spice cake mix or cinnamon cake mix (15.25 oz box)
- 1 can pumpkin puree (15 oz can)
For the Glaze:
- 1 1/4 cups powdered sugar
- 3 tablespoons milk
- 1/2 teaspoon vanilla extract
Directions:
1. Preheat oven to 350°F (175°C).
2. In a large bowl, combine the cake mix and pumpkin puree until a smooth dough forms.
3. Drop tablespoon-sized scoops of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
4. Bake for 12-15 minutes, or until the edges are set and the cookies spring back when touched.
5. While the cookies cool, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
6. Once the cookies are completely cooled, drizzle the glaze over the top.
7. Allow the glaze to set before serving.
