SLOW COOKER AMISH CORN CHWDER
📝 Ingredients
• 4 cups corn kernels (fresh or frozen)
• 1 medium onion, diced
• 2 medium potatoes, peeled & diced
• 3 cups chicken or vegetable broth
• 1 cup heavy cream
• 4 slices bacon, cooked & crumbled
• 2 cloves garlic, minced
• 1 tsp salt
• ½ tsp black pepper
• ½ tsp smoked paprika
• 2 tbsp butter
• 2 tbsp all-purpose flour
• 2 tbsp fresh parsley, chopped (garnish)
👩🍳 Instructions:
1️⃣ Add corn, onion, potatoes, broth, garlic, salt, pepper & paprika to a slow cooker.
2️⃣ Cook on LOW 6–8 hrs until potatoes are tender.
3️⃣ In a small saucepan, melt butter, stir in flour to make a roux (1–2 mins).
4️⃣ Whisk in heavy cream until smooth & thickened.
5️⃣ Stir cream mixture into slow cooker.
6️⃣ Add crumbled bacon, mix, and cook on HIGH 30 mins to thicken.
7️⃣ Garnish with parsley & serve hot.
