Creamy Cajun Chicken Pasta

Ingredients:
2 chicken breasts (cut into bite-sized cubes)
250g penne pasta
2 tbsp olive oil or butter
2 cloves garlic (minced)
1 onion (diced)
1 red bell pepper (sliced)
1 cup heavy cream
1 cup chicken broth
1 cup parmesan cheese (grated)
2 tsp Cajun seasoning (plus extra for chicken)
1 tsp paprika
½ tsp chili flakes (optional)
Salt & black pepper (to taste)
Fresh parsley (for garnish)
Instructions:
Cook Pasta: Boil penne pasta in salted water until al dente. Drain and set aside.
Prepare Chicken: Season chicken cubes with Cajun seasoning, salt, and pepper. Pan-sear in olive oil until golden brown and fully cooked. Remove and set aside.
Make Sauce: In the same pan, sauté garlic, onion, and bell pepper. Add Cajun seasoning, paprika, and chili flakes. Pour in chicken broth and heavy cream. Let it simmer.
Add Cheese & Pasta: Stir in parmesan cheese until creamy. Add cooked pasta and toss well.
Combine & Serve: Top with seared chicken, garnish with fresh parsley, and serve hot.
