1 lb ground beef
1 onion, diced
2 cups frozen mixed vegetables (peas, corn, carrots)
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
1 cup tater tots
1 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon olive oil
1/2 teaspoon paprika
Fresh parsley, chopped (for garnish)
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C).
Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the ground beef and cook until browned, breaking it apart with a spatula. Season with garlic powder, salt, pepper, and paprika.
Mix Ingredients: Once the beef is cooked, stir in the frozen mixed vegetables and cream of mushroom soup. Mix well until everything is combined.
Layer the Casserole: In a greased 9x13-inch baking dish, spread the beef and vegetable mixture evenly. Top with tater tots, placing them in a single layer. Sprinkle the shredded cheddar cheese over the tater tots.
Bake: Bake in the preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy, and the cheese is melted.
Serve: Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.
