🇫🇷 Velouté de Champignons (Mushroom Soup)
A smooth, creamy mushroom soup finished with herbs and black pepper.
Ingredients:
• 300 g mushrooms, sliced
• 1 onion, chopped
• 2 tbsp butter
• 2 tbsp flour
• 500 ml vegetable or chicken stock
• 100 ml cream
• Salt and pepper
• Fresh thyme (for garnish)
Instructions:
1. Sauté onions and mushrooms in butter until soft.
2. Stir in flour and cook briefly.
3. Gradually add stock, stirring to avoid lumps.
4. Simmer for 15 min, then blend until smooth.
5. Add cream, season, and garnish with thyme.
