Hawaiian Banana Bread
This banana bread takes a tropical twist with crushed pineapple, coconut, and macadamia nuts. Super moist, naturally sweet, and full of island flavor — it's banana bread on vacation!
Ingredients (makes 1 loaf or 12 muffins)
• 2 ripe bananas, mashed
• ½ cup crushed pineapple (drained)
• ⅓ cup vegetable oil
• 2 eggs
• ½ cup brown sugar
• 1 tsp vanilla extract
• 1 ½ cups all-purpose flour
• 1 tsp baking soda
• ½ tsp salt
• ½ tsp cinnamon
• ½ cup shredded coconut
• ⅓ cup chopped macadamia nuts (optional)
