Blueberry Mango Spinach Salad with Walnuts, Feta & Lemon Honey Mustard Dressing
Ingredients:
4 cups fresh baby spinach
1 ripe mango, diced
1/2 cup fresh blueberries
1/4 cup crumbled feta cheese
1/4 cup chopped walnuts (toasted)
For the Dressing:
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp honey
1 tsp Dijon mustard
Salt & pepper to taste
Directions:
In a large salad bowl, combine the spinach, diced mango, blueberries, feta, and toasted walnuts.
In a small jar, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well emulsified.
Drizzle the dressing over the salad just before serving. Toss gently to coat.
Serve chilled for a refreshing, sweet and tangy flavor!
