Ingredients:
1 ½ cups all-purpose flour
1 cup rolled oats
¾ cup light brown sugar, packed
½ tsp baking soda
¼ tsp salt
¾ cup unsalted butter, melted
2 cups chopped fresh rhubarb
½ cup granulated sugar
1 tbsp cornstarch
1 tsp vanilla extract
1 tbsp lemon juice
¼ cup water
Instructions:
1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by lining it with parchment paper or greasing it lightly.
2. In a large bowl, combine the flour, oats, brown sugar, baking soda, and salt.
3. Pour in the melted butter and mix until you achieve a crumbly and well-blended texture.
4. Press about two-thirds of the mixture firmly into the bottom of the prepared pan to create a sturdy base.
5. In a saucepan over medium heat, combine the rhubarb, granulated sugar, cornstarch, vanilla extract, lemon juice, and water.
6. Cook for 5–7 minutes, stirring often, until the rhubarb softens and the mix thickens a bit.
7. Pour the rhubarb filling onto the crust and spread it evenly.
8. Sprinkle the remaining crumble mixture on top of the rhubarb layer.
9. Bake for 30–35 minutes until the top is golden brown and the filling bubbles at the edges.
10. Allow to cool completely in the pan before cutting into bars. Store any leftovers in the refrigerator for up to 4 days.
