Lemonade Cupcakes
Ingredients:
For the Cupcakes:
1 box lemon cake mix
3/4 cup frozen lemonade concentrate (thawed)
1/2 cup vegetable oil
3 large eggs
1/2 cup water
For the Lemonade Sugar Topping:
1/4 cup lemonade concentrate
1/4 cup granulated sugar
For Garnish:
Lemon slices, thinly cut
Extra granulated sugar (optional, for coating the tops)
Directions:
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners or grease well.
In a large bowl, mix lemon cake mix, thawed lemonade concentrate, oil, eggs, and water until well blended and smooth.
Fill each cupcake liner about 3/4 full. Bake for 18–20 minutes or until a toothpick comes out clean.
While cupcakes are baking, stir together the 1/4 cup lemonade concentrate and 1/4 cup sugar for the topping.
When cupcakes are done, while still warm, spoon the lemonade sugar mixture over the tops.
Allow to cool, then garnish with a sugared lemon slice or a fresh lemon twist if desired.

Tips:
Coat lemon slices in sugar a few hours before for a candy-like garnish.
