Chicken Fried Rice
Ingredients:
2 cups cooked white rice (preferably day-old)
1 cup cooked chicken, diced
1 cup mixed vegetables (peas, carrots, corn)
2 large eggs, beaten
3 tablespoons soy sauce
2 tablespoons vegetable oil
1 teaspoon sesame oil
3 green onions, sliced
2 cloves garlic, minced
Salt and pepper to taste

1. Heat a large skillet or wok over medium-high heat and add 2 tablespoons of vegetable oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
2. Push the garlic to the side of the skillet and pour in the beaten eggs. Scramble the eggs until fully cooked, then mix them with the garlic.
3. Add the diced chicken and mixed vegetables to the skillet. Stir-fry for about 2-3 minutes until the vegetables are heated through.
4. Add the cooked rice to the skillet, breaking up any clumps. Pour in the soy sauce and sesame oil, stirring everything together until well combined and heated through.
5. Season with salt and pepper to taste. Add the sliced green onions and stir for an additional minute.
6. Remove from heat and serve hot.
