Salmon Alfredo Pasta!
Ingredients:
For the pasta:
2 cups fettuccine pasta (or your preferred pasta)
1 tablespoon olive oil
Salt for the pasta water
For the salmon:
4 salmon fillets, skin removed
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon garlic powder (optional)
1 tablespoon fresh parsley, chopped (for garnish)
For the Alfredo sauce:
1/2 cup unsalted butter
1 cup heavy cream
1 1/2 cups grated Parmesan cheese
1 teaspoon garlic powder
Salt and pepper to taste
Instructions:
1. Cook the pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package instructions until al dente. Drain and set aside.
2. Cook the salmon:
While the pasta is cooking, heat olive oil in a large skillet over medium heat.
Season the salmon fillets with salt, pepper, and garlic powder (if using).
Place the salmon fillets in the skillet and cook for about 4-5 minutes on each side, until the salmon is cooked through and easily flakes with a fork. Remove from the skillet and set aside. Cut the salmon into bite-sized pieces.
3. Make the Alfredo sauce:
In the same skillet, melt the butter over medium heat.
Add the heavy cream and bring to a simmer, stirring occasionally.
Once the cream is simmering, add the grated Parmesan cheese, garlic powder, salt, and pepper. Stir continuously until the cheese has melted and the sauce has thickened to your desired consistency.
4. Assemble the dish:
Add the cooked pasta to the skillet with the Alfredo sauce, tossing to coat the pasta evenly.
Gently fold in the cooked salmon pieces.
5. Serve:
Plate the pasta and salmon mixture, then garnish with fresh parsley.
Serve immediately and enjoy this creamy, flavorful dish!
