Smoky & Savory Vegan BBQ Jackfruit Sandwiches: Meatless Magic ✨🍔🌱

ingredients:
2 cans (20 oz / 565g each) young green jackfruit in brine or water, drained and rinsed
1 tbsp olive oil
1 medium yellow onion, thinly sliced
2 cloves garlic, minced
1 cup (240ml) your favorite vegan BBQ sauce (ensure no non-halal ingredients)
2 tbsp apple cider vinegar
1 tbsp maple syrup or brown sugar (optional, adjust to BBQ sauce sweetness)
1 tsp smoked paprika
½ tsp cumin
Salt and freshly ground black pepper to taste
4-6 vegan burger buns or slider buns
Optional toppings: coleslaw (vegan), pickles, sliced red onion

directions:
1. Drain the jackfruit well. Rinse it under cold water. Cut away the hard core from each piece and discard. Roughly chop the remaining tender parts.
2. Heat the olive oil in a large skillet or pot over medium heat. Add the sliced onion and cook until softened and lightly caramelized, about 8-10 minutes. Add the minced garlic and cook for 1 minute more.
3. Add the chopped jackfruit to the skillet. Cook for 5-7 minutes, using a spatula or potato masher to break up the jackfruit pieces further, creating a shredded texture.
4. Stir in the BBQ sauce, apple cider vinegar, maple syrup (if using), smoked paprika, and cumin. Season with salt and pepper. Stir well to coat the jackfruit completely.
5. Reduce the heat to low, cover, and let the mixture simmer for at least 15-20 minutes, stirring occasionally, to allow the flavors to meld and the jackfruit to become very tender. (Alternatively, transfer to a slow cooker on low for 2-3 hours or Instant Pot on manual high pressure for 5 mins with natural release).
6. Use two forks to further shred any larger pieces of jackfruit within the sauce until it resembles pulled meat. Taste and adjust seasoning if needed.
7. Toast the vegan burger buns lightly.
8. Pile the warm BBQ jackfruit mixture onto the bottom buns. Top with desired toppings like vegan coleslaw and pickles, then add the top bun. Serve immediately.
