Easy & Quick Sugar-Free Blueberry Chia Seed Jam Recipe Goodness 😋🥄

Ingredients:
2 cups (300g) fresh or frozen blueberries
3 tablespoons chia seeds
1-2 tablespoons lemon juice (to enhance flavor and help preserve)
Optional: Pinch of cinnamon or vanilla extract

Directions:
1. Combine the blueberries (thawed if frozen) and lemon juice in a medium saucepan over medium heat.
2. Cook, stirring often, until the blueberries burst and the mixture becomes juicy and saucy, about 5-10 minutes. Mash some berries with a spoon for desired texture.
3. Remove the saucepan from the heat. Stir in the chia seeds (and optional cinnamon/vanilla) until well combined.
4. Let the mixture sit for 10-15 minutes, stirring occasionally, as it starts to thicken.
5. Transfer the jam to a clean jar or airtight container.
6. Cool completely, then cover and refrigerate for at least 2 hours to fully set. The jam will thicken considerably upon chilling.
7. Taste the chilled jam; if you prefer it slightly sweeter, you can stir in a very small amount of stevia or monk fruit sweetener, but the blueberries should provide natural sweetness.
8. Store in the refrigerator for up to 1 week.
