CAJUN GARLIC BUTTER CHICKEN BITES WITH CREAMY BOWTIES
Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
12 oz bowtie pasta
2 tablespoons butter
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup sun-dried tomatoes, chopped (adds color and tang)
1/2 teaspoon red pepper flakes (for a kick
Fresh parsley, chopped (for garnish)
Salt and pepper to taste
Directions:
Cook the bowtie pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil and butter over medium-high heat. Season the chicken bites with Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper.
Add the chicken to the skillet and cook for 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add minced garlic and cook for 1 minute until fragrant.
Add the chicken broth, heavy cream, and sun-dried tomatoes, stirring to combine. Bring to a simmer and cook for 3-4 minutes until the sauce thickens.
Stir in the grated Parmesan cheese and red pepper flakes for a flavorful kick. Adjust seasoning with salt and pepper to taste.
Add the cooked pasta to the skillet and toss to coat in the creamy sauce.
Return the chicken bites to the skillet, stirring everything together until well combined.
Garnish with fresh parsley and serve.
