Kid-Friendly Crispy Chickpea Nuggets - Totally Vegan! 👍😋🌿
ingredients:
1 can (15 ounces / 425g) chickpeas, rinsed and drained very well
1/4 cup (30g) oat flour (or other gluten-free flour)
1/4 cup (25g) nutritional yeast (optional, for cheesy flavor)
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon sea salt
Pinch of black pepper
1 tablespoon flaxseed meal mixed with 3 tablespoons water (flax egg)
1 tablespoon olive oil or other vegetable oil
1/2 cup (50g) gluten-free breadcrumbs
directions:
1. Preheat oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Prepare chickpeas: Place the well-drained chickpeas in a large bowl and mash them with a fork or potato masher until mostly broken down but still with some texture.
3. Add dry ingredients: Add the oat flour, nutritional yeast (if using), smoked paprika, garlic powder, onion powder, salt, and pepper to the bowl with the mashed chickpeas. Mix well to combine.
4. Add wet ingredients: Pour in the flax egg and olive oil. Stir until everything is thoroughly mixed and the mixture holds together.
5. Form nuggets: Place the breadcrumbs in a shallow dish. Take spoonfuls of the chickpea mixture and shape them into nugget forms (about 1-2 inches long).
6. Coat nuggets: Gently roll each nugget in the breadcrumbs, pressing lightly to coat all sides. Place the coated nuggets onto the prepared baking sheet.
7. Bake: Bake for 20-25 minutes, flipping halfway through, until the nuggets are golden brown and crispy.
8. Serve: Serve hot with your favorite dipping sauce.
