Crockpot Loaded Steak and Potato Bake
Ingredients:
1.5 lbs sirloin or ribeye steak, cut into bite-sized chunks
6 medium russet potatoes, peeled and diced
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup milk or heavy cream
1/4 cup butter, melted
6 slices cooked bacon, crumbled
1/4 cup green onions or chives, chopped
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
Olive oil for searing
Directions:
Season steak chunks with salt, pepper, garlic powder, and onion powder.
In a hot skillet, sear steak on all sides until browned (about 2–3 minutes per side).
Lightly grease the bottom of your crockpot.
Layer half of the potatoes in the crockpot. Top with half the steak, cheddar, bacon, and chives. Repeat layers.
In a small bowl, whisk together sour cream, milk, and melted butter. Pour evenly over the layers.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are fork tender.
Just before serving, sprinkle with extra cheddar, bacon, and chives if desired.
