Citrus Jam Roly-Poly Spotted Dick Pudding 🍊🍮

Ingredients
Dry Ingredients
🥣 Self-raising flour – 200g, sifted
🧂 Salt – a pinch
🧈 Vegetable suet – 100g, shredded
🍇 Raisins, sultanas, or pre-soaked currants – 120g
🍚 Caster sugar – 55g

Wet Ingredients
🥛 Whole milk – 150ml
🌿 Vanilla extract – 1 tsp
🍊 Orange zest – from 1 orange
🍋 Lemon zest – from 1 lemon

Citrus Filling
🍯 Orange and ginger preserve – 135g (or any citrus preserve/marmalade of your choice)

Topping
🥛 Milk – for brushing
🍬 Demerara sugar – 1 tbsp

Method
1️⃣ Preheat your oven to 180°C (160°C fan) / 350°F / Gas Mark 4.

2️⃣ Prepare your wrapping materials:

Cut greaseproof paper (50cm x 37.5cm).
Cut foil (55cm x 37.5cm).
3️⃣ Mix the dry ingredients – In a large bowl, combine the flour, suet, sugar, salt, and dried fruit.

4️⃣ Prepare the wet mixture – Mix the milk and vanilla extract together. Add this to the dry ingredients, along with the orange and lemon zest.

5️⃣ Combine thoroughly – Stir with a wooden spoon, then use your hands to fully incorporate the mixture.

6️⃣ Flour your work surface (about 25cm x 35cm).

7️⃣ Shape the dough – Tip the mixture onto the floured surface and knead briefly (about 10 kneads). Roll out into a 22cm x 32cm rectangle.

8️⃣ Spread the preserve – Evenly spread the citrus jam over the dough, leaving a 1.5cm border around the edges.

9️⃣ Roll it up – Start rolling from the 22cm edge. Press the seam down to seal and pinch the ends together.

🔟 Wrap the roly-poly –

Place it seam-side down onto the greaseproof paper (long side aligned with the paper).
Fold the edges together and create a pleat, leaving space for expansion.
Tie both ends with kitchen string, like a Christmas cracker.
Repeat with the foil.

Half-fill a large roasting tin with just-boiled water.
Place an oven-safe rack over the tray.
Place the wrapped roly-poly on top of the rack.

1️⃣3️⃣ Finishing touches – Remove from the oven, unwrap, brush with milk, and sprinkle with demerara sugar.
