Shrimp Grilled Cheese with Garlic Bread and Monterey Jack Cheese
Ingredients:
- 8 slices of bread (your choice)
- 1 cup cooked shrimp, peeled and chopped
- 2 cups Monterey Jack cheese, shredded
- 1/4 cup mayonnaise
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- 1 tablespoon fresh parsley, chopped
- 4 tablespoons unsalted butter, softened
- Salt and pepper to taste
Instructions:
1. In a mixing bowl, combine the chopped shrimp, mayonnaise, minced garlic, lemon juice, parsley, and a pinch of salt and pepper. Mix well until blended.
2. Spread a thin layer of butter on one side of each slice of bread.
3. On the unbuttered side of four slices, layer half of the shredded Monterey Jack cheese.
4. Spoon the shrimp mixture evenly over the cheese on the four slices.
5. Top the shrimp with the remaining Monterey Jack cheese and cover with the other four slices of bread, buttered side up.
6. Heat a large skillet over medium heat. Carefully place the sandwiches in the skillet, cooking until golden brown, about 3-4 minutes.
7. Carefully flip each sandwich and continue cooking until the other side is golden and the cheese has melted, about another 3-4 minutes.
8. Remove the sandwiches from the skillet and let them cool for a minute before slicing.
9. Serve hot and enjoy your delicious shrimp grilled cheese!
