Taco Chili
Hearty Tex-Mex Taco Chili Feast
Ingredients:
1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (15 oz) diced tomatoes, with juice
1 can (8 oz) tomato sauce
2 tablespoons taco seasoning
1 teaspoon cumin
1/2 teaspoon chili powder
1/4 cup water
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro
Directions:
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the skillet with the beef and sauté until the onion is translucent.
Transfer the beef mixture to a slow cooker or a large pot (if cooking on the stovetop).
Add the black beans, corn, diced tomatoes, tomato sauce, taco seasoning, cumin, chili powder, and water to the skillet. Stir to combine.
For slow cooker: Cook on low for 6-8 hours or high for 3-4 hours. For stovetop: Bring to a boil, then reduce heat and simmer for 30 minutes.
Season with salt and pepper to taste. Serve hot with optional toppings as desired.
